A pale white first, a supple red with meat

Le Cabaret’s blackboard joins charcuterie and steak frites with seasonal vegetables. In his November 2023 Hanako interview, manager Yasuhiro Tsubota chose Alsace’s Kuku Blanc 2020 as an opening glass: a lightly cloudy field blend with gentle alcohol. It supplies a starting preference for someone beginning with the ten-vegetable crudité.

For an evening continuing into meat, his flagship red offers another direction. Jean-Claude Lapalu’s Beaujolais-Villages Tentation 2021 blends Syrah with Gamay; Tsubota emphasized smoothness and savoury depth. A light first plate suggests the pale white direction; meat gives the supple, savoury red a purpose. Those bottles belong to the 2023 report; describe the style and food you want when choosing today’s glasses.

A dated sense of spending

In that report the crudité was ¥1,760 and a glass ¥1,320, making ¥3,080 for one plate and one glass at the time. It establishes a different spending scale from bread or takeaway coffee. The day's blackboard determines current dishes and prices. For a full dinner, set a budget around the number of diners, appetizers, mains and glasses when reserving.

Choose it as the evening ending
